Ingredients
1 tsp cinnamon (optional, for extra warmth)
1 cup rolled oats
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 ripe bananas, mashed
1/4 cup honey or maple syrup
1/3 cup plain Greek yogurt
1/4 cup melted coconut oil (or vegetable oil)
1 large egg
1 tsp vanilla extract
1/3 cup dark chocolate chips (plus extra for topping, if desired)
1/4 cup chopped walnuts
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.
Combine Dry Ingredients: In a large mixing bowl, whisk together oats, flour, baking powder, baking soda, salt, and cinnamon.
Mix Wet Ingredients: In a separate bowl, mash the bananas, then add honey, yogurt, coconut oil, egg, and vanilla extract. Stir until well combined.
Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.
Add Mix-Ins: Fold in the dark chocolate chips and walnuts, reserving a few for topping if desired.
Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle a few extra chocolate chips and walnut pieces on top for added texture.
Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
