Ultimate Walking Taco Casserole

Ingredients

1 small onion, finely chopped
1 packet (1 oz) taco seasoning mix
1 pound ground beef
1 can (16 oz) refried beans
1 can (10 oz) diced tomatoes with green chilies, drained
1 cup sour cream
2 cups shredded Mexican blend cheese, divided
4 cups coarsely crushed tortilla chips
Optional toppings: chopped tomatoes, sliced black olives, chopped cilantro, salsa, guacamole

Instructions

Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

In a large skillet, cook ground beef and onion over medium-high heat until beef is no longer pink and onion is tender. Drain excess grease.

Stir in taco seasoning mix and cook according to package directions.

In a medium bowl, mix refried beans, drained diced tomatoes with green chilies, and sour cream until well combined.

To assemble casserole, spread half of crushed tortilla chips in prepared baking dish.

Layer half of beef mixture over chips, followed by half of bean mixture.

Sprinkle with 1 cup shredded cheese.

Repeat layers with remaining tortilla chips, beef mixture, bean mixture, and cheese.

Cover dish with foil and bake for 20-25 minutes, until heated through and bubbly.

Remove foil and bake for additional 5 minutes, until cheese is melted and slightly golden.

Let casserole cool for a few minutes before serving. Serve with optional toppings such as chopped tomatoes, sliced black olives, chopped cilantro, salsa, and guacamole.
