Cranberry Orange Loaf with Citrus Glaze

Ingredients

For the Bread:

1 cup granulated sugar
1 ½ teaspoons baking powder
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup freshly squeezed orange juice (from about 2 oranges)
⅓ cup vegetable oil or melted butter
1 tablespoon orange zest
1 teaspoon vanilla extract
2 large eggs
1 ½ cups fresh or frozen cranberries, halved
For the Citrus Glaze:

2-3 tablespoons freshly squeezed orange juice
1 cup powdered sugar
½ teaspoon vanilla extract

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly mixed.

Mix Wet Ingredients: In a separate bowl, blend the orange juice, vegetable oil or melted butter, orange zest, vanilla extract, and eggs. Whisk until everything is thoroughly combined.

Blend Mixtures: Slowly pour the wet mixture into the bowl with the dry ingredients. Stir just until the batter is smooth and no dry spots remain. Avoid overmixing.

Fold in Cranberries: Gently fold the halved cranberries into the batter.

Bake the Loaf: Transfer the batter into your prepared loaf pan. Bake for 55 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Cool the Bread: Let the bread cool in the pan for about 10 minutes before removing it. Place the loaf on a wire rack to cool completely.

Prepare the Citrus Glaze: In a small bowl, mix together the powdered sugar, orange juice, and vanilla extract until the glaze is smooth. Adjust the consistency as needed by adding more orange juice or powdered sugar.

Glaze the Loaf: Once the bread is fully cooled, drizzle the citrus glaze over the top.
