½ cup granulated sugar
1 ½ cups all-purpose flour
2 tsp baking powder
¼ tsp salt
½ cup milk
1 large egg
2 tbsp melted butter
1 tsp vanilla extract
Vegetable oil (for frying)
For the Cinnamon Sugar Coating:
1 tsp ground cinnamon
½ cup granulated sugar
Instructions
Prepare the Dough: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Heat the Oil: In a deep pan or fryer, heat vegetable oil to 350°F (175°C). Ensure there’s enough oil to submerge the donuts.
Form the Donuts: Use a mini donut pan or a piping bag with a round tip to pipe the batter into the donut molds. If using a mini donut pan, lightly grease it beforehand.
Fry the Donuts: Fry the donuts in batches, cooking each side until golden brown, about 1-2 minutes per side. Remove them with a slotted spoon and drain on paper towels.
Coat in Cinnamon Sugar: In a small bowl, mix the sugar and cinnamon. While the donuts are still warm, roll them in the cinnamon sugar mixture to coat.
Serve: Enjoy the mini donuts fresh and warm, or store them in an airtight container for up to 2 days.
