Ingredients
1 pound ground beef
1 cup salsa
4 large bell peppers, any color
1 cup shredded cheddar cheese, divided
1/2 cup sour cream
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro, chopped (optional, for garnish)
Instructions
Preheat and Prep: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
Cook the Beef: In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain excess grease if necessary.
Season the Beef: Add chili powder, cumin, salt, and pepper to the beef. Stir well to combine.
Mix in Salsa: Pour salsa into the skillet with the seasoned beef. Stir together and let it simmer for 5 minutes, allowing flavors to meld.
Stuff the Peppers: Spoon the beef mixture evenly into each bell pepper until they are filled to the top.
Cheese and Bake: Sprinkle each stuffed pepper with shredded cheddar cheese. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until peppers are tender and cheese is melted and bubbly.
Serve: Remove from the oven and let cool slightly. Garnish with dollops of sour cream and chopped cilantro, if desired, before serving.
