Ingredients
3 garlic cloves, minced
1 lb (450g) ground beef
1 medium onion, finely chopped
4 large potatoes, peeled and thinly sliced
1 cup beef broth
1 cup shredded cheddar cheese (optional)
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
Salt and pepper, to taste
Fresh thyme or parsley, for garnish
2 tbsp olive oil or butter
Instructions
Preheat the Oven: Set your oven to 375°F (190°C).
Cook the Beef Mixture:
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for an additional minute.
Add the ground beef, breaking it up with a spoon. Cook until browned.
Stir in the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Cook for another 2-3 minutes.
Pour in the beef broth, stirring to combine. Let the mixture simmer for about 5 minutes, until slightly thickened. Remove from heat.
Assemble the Casserole:
In a greased baking dish, spread half of the beef mixture on the bottom.
Layer half of the sliced potatoes over the beef mixture.
Add the remaining beef mixture on top of the potatoes, then layer the remaining potato slices on top.
Bake:
Cover the dish with aluminum foil and bake for 45 minutes.
Remove the foil and sprinkle the shredded cheese over the top (if using). Bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Enjoy.
