Easy Slow Cooker Quiche

Ingredients

1 cup milk
6 large eggs
1 cup shredded cheese (cheddar, Swiss, or your favorite)
1 cup diced ham or cooked bacon (optional)
1/2 cup diced onion
1/2 cup diced bell peppers (any color)
Salt and pepper to taste
Cooking spray or butter for greasing the slow cooker

Instructions

Grease the slow cooker generously with cooking spray or butter.
In a large bowl, whisk together eggs and milk until well combined.
Stir in shredded cheese, diced ham or bacon (if using), onion, and bell peppers. Season with salt and pepper.
Pour the mixture into the greased slow cooker.
Cover and cook on low for 3-4 hours, or until the quiche is set and the edges are lightly browned.
Once cooked, carefully remove the quiche from the slow cooker using a spatula.
Allow it to cool slightly before slicing and serving.
Serve with:

A zesty green salad dressed with vinaigrette.
Roasted potatoes or crispy bacon on the side for added flavor and texture.
