Ingredients
1 cup all-purpose flour
1 tablespoon Cajun seasoning (adjust to taste)
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs, beaten
1 cup breadcrumbs or cornmeal (for coating)
Vegetable oil, for frying
Instructions
In a shallow dish, mix together flour, Cajun seasoning, garlic powder, paprika, salt, and black pepper.
In another dish, beat the eggs.
Dip each shrimp first in the seasoned flour mixture, shaking off any excess, then into the beaten eggs, and finally coat thoroughly with breadcrumbs or cornmeal.
Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
Fry the shrimp in batches for 2-3 minutes per side, or until golden brown and cooked through. Drain on paper towels.
Serve hot, optionally with a dipping sauce like remoulade or tartar sauce.
