Ingredients

  • 4–6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4–5 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels. Season generously with salt, pepper, and paprika on both sides.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden and crispy (about 4–5 minutes per side). Remove and set aside.
  3. Make the Sauce:
    • Lower the heat and melt butter in the same skillet. Add minced garlic and sauté for 1–2 minutes until fragrant.
    • Stir in chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 4–5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Combine:
    • Return the chicken thighs to the skillet, skin-side up, and spoon the sauce over the chicken. Cover and simmer on low heat for 20–25 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).
  5. Serve:
    • Garnish with fresh parsley and serve over rice, mashed potatoes, or pasta.
