Ingredients
2 large cucumbers, thinly sliced
1 medium carrot, shredded
2 green onions, finely chopped
2 tbsp sesame seeds (toasted if preferred)
For the Dressing:
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or sugar (adjust to taste)
1 clove garlic, minced
1 tsp ginger, grated (optional for extra flavor)
A pinch of red pepper flakes (optional, for a slight kick)
Instructions
Prepare the Vegetables: Thinly slice the cucumbers and place them in a large mixing bowl. Add the shredded carrot and chopped green onions.
Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or sugar), minced garlic, and grated ginger. If you prefer a bit of heat, add a pinch of red pepper flakes.
Combine: Pour the dressing over the cucumber mixture. Sprinkle in the sesame seeds and toss everything well to coat the vegetables evenly.
Marinate: Let the salad sit for about 10–15 minutes to allow the flavors to blend.
Serve: Give it a final toss before serving, and enjoy this vibrant, flavorful salad on its own or as a side to your favorite dishes!
Tips:
Adjust Sweetness: If you like it sweeter, add a bit more honey or sugar.
Toasted Sesame Seeds: For extra depth of flavor, toast the sesame seeds briefly in a dry pan over low heat until they turn golden brown.
Extra Crunch: You can add thinly sliced bell peppers or radishes for more color and crunch.
Enjoy.
