Ingredients
2 packages (8 oz each) of cream cheese, softened
1 cup crushed pineapple, drained
1 cup chopped pecans (plus extra for coating)
1/4 cup green onions, finely chopped
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
Instructions
Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, crushed pineapple, 1 cup of chopped pecans, green onions, garlic powder, and onion powder. Mix until all ingredients are well incorporated.
Season: Add salt and black pepper to taste, adjusting to your preference.
Shape the Ball: Using your hands or a spatula, shape the cheese mixture into a ball. Wrap it tightly in plastic wrap and refrigerate for at least 1 hour (or overnight) to firm up.
Coat with Pecans: Once the cheese ball is firm, unwrap it and roll it in extra chopped pecans until evenly coated.
Serve: Place the cheese ball on a serving plate and garnish with additional chopped pecans or green onions if desired. Serve with crackers, sliced veggies, or pita chips.
Tips
For added flavor, try mixing in 1/4 cup of shredded cheddar cheese.
This cheese ball can be prepared a day in advance for convenience.
If you like a bit of heat, add a pinch of red pepper flakes or chopped jalapeƱos.
