1 cup shredded mozzarella cheese
2 large potatoes, peeled and grated
1/4 cup Parmesan cheese, grated
2 tablespoons all-purpose flour
1 egg, lightly beaten
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Salt and pepper to taste
Oil for frying
Fresh dill or parsley for garnish
Instructions
Prepare the Potatoes: After grating the potatoes, place them in a clean kitchen towel and squeeze out excess moisture. This helps the bites stay crispy.
Mix Ingredients: In a large bowl, combine the grated potatoes, mozzarella, Parmesan, flour, egg, garlic powder, paprika, salt, and pepper. Stir until everything is evenly mixed.
Shape the Bites: Scoop out small portions of the mixture (about 2 tablespoons each) and form them into rough, slightly flattened balls.
Fry: Heat oil in a frying pan over medium-high heat. Once the oil is hot, carefully place the bites in the pan. Fry each side for 3-4 minutes, or until golden brown and crispy. Make sure not to overcrowd the pan.
Drain and Serve: Once cooked, place the potato bites on paper towels to drain excess oil. Garnish with fresh dill or parsley for a burst of freshness.
