Instructions
Preheat the oven to 350°F (175°C). Grease and line a round baking pan with parchment paper.
Prepare the batter: In a large bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the eggs, milk, and oil until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in 1 cup of shredded mozzarella cheese.
Bake the base: Pour the batter into the prepared pan and bake for 20-25 minutes until the base is golden brown and firm to the touch.
Prepare the topping: In a small bowl, mix the sour cream, melted butter, garlic powder (if using), and the remaining mozzarella and Parmesan cheese. Spread this cheesy mixture evenly over the baked base.
Final bake: Return the pan to the oven and bake for an additional 10-15 minutes until the top is bubbly and golden.
Serve: Let it cool slightly, then garnish with fresh parsley before slicing. Serve warm.
