Ingredients
1 cup wafer cookies (crushed)
2 cups toasted hazelnuts (or almonds)
2 cups milk chocolate (melted)
1/2 cup Nutella (or any chocolate hazelnut spread)
1/4 cup crushed crispy rice cereal (optional for extra crunch)
1 tablespoon butter (melted)
Pinch of salt
Instructions
Prepare the Filling:
In a large bowl, mix together the Nutella, melted butter, and a pinch of salt until smooth.
Add in the crushed hazelnuts and crushed wafer cookies. Stir until the ingredients are well combined.
Shape the Bites:
Scoop small portions of the mixture (about 1 tablespoon each) and roll them into small balls with your hands.
Place the balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes, or until they are firm.
Coat in Chocolate:
Melt the milk chocolate in a microwave or double boiler. Make sure it’s smooth and glossy.
Dip each hazelnut ball into the melted chocolate, making sure it is fully coated.
Optionally, roll the chocolate-covered balls in crushed crispy rice cereal for extra crunch.
Set the Bites:
Place the coated bites back on the parchment-lined sheet and refrigerate again for 20-30 minutes to allow the chocolate to set completely.
