Ingredients
1 teaspoon instant yeast
1 teaspoon sugar
1/2 teaspoon salt
3/4 cup warm water
2 tablespoons olive oil
2 cups all-purpose flour
2 tablespoons fresh parsley, finely chopped
1 tablespoon melted butter (optional)
Extra flour for dusting
Instructions
Prepare the Dough
In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Slowly add the warm water and olive oil while mixing with a wooden spoon or hand mixer until a dough starts to form.
Knead the Dough
Lightly flour a clean surface and knead the dough for 5-7 minutes until it’s soft and elastic. If it’s too sticky, sprinkle more flour gradually until the dough is smooth.
Let the Dough Rise
Transfer the dough to a greased bowl, cover it with a clean cloth, and let it rest in a warm area for about 1 hour, or until it doubles in size.
Shape the Flatbreads
Once the dough has risen, punch it down gently. Divide it into equal portions (around 8-10 small balls). Roll each portion into a small, flat circle about 1/4 inch thick.
Cook the Flatbreads
Heat a large skillet or griddle over medium-high heat. Place each flatbread onto the skillet and cook for 2-3 minutes on each side, or until golden brown and puffed. The bread should have brown spots and be slightly crispy on the outside while remaining soft inside.
Brush with Butter and Herbs
Once the flatbreads are cooked, brush them with melted butter (if using) and sprinkle the chopped parsley on top for a fresh herbed flavor.
