Ingredients
1/4 cup plain Greek yogurt (for added creaminess and tang)
2 cups cooked, shredded chicken (rotisserie works great)
1/2 cup mayonnaise
1/4 cup finely diced red onion
1/3 cup diced celery
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste
Optional: 1/4 cup chopped pecans or walnuts for extra crunch
Optional: 1/4 cup dried cranberries or chopped apple for a sweet contrast
Instructions
In a large mixing bowl, combine the shredded chicken, mayonnaise, and Greek yogurt. Stir until the chicken is well-coated.
Add the diced red onion, celery, mustard, and lemon juice. Mix until evenly combined.
Season with salt and pepper to taste. Adjust the creaminess by adding more mayonnaise or yogurt if needed.
For added texture and flavor, mix in the optional pecans/walnuts and cranberries or apples.
Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
