Ingredients
2 large onions, sliced
1 cup beef stock
1/2 cup tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon brown vinegar
4 bone-in pork chops
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried thyme (optional)
Salt and pepper to taste
Instructions
Sear the Pork Chops:
Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them on each side for 2-3 minutes until they’re golden brown. Remove from the skillet and set aside.
Prepare the Onions:
In the same skillet, add the sliced onions and cook for about 5 minutes until they’re soft and slightly caramelized. Add the minced garlic and cook for another minute.
Make the Sauce:
In a bowl, combine the beef stock, tomato sauce, Worcestershire sauce, and brown vinegar. Stir well to mix.
Assemble in the Slow Cooker:
Place the seared pork chops in the slow cooker. Pour the sauce mixture over the chops, ensuring they’re well coated. Add the caramelized onions on top and sprinkle with dried thyme (if using).
Cook:
Cover the slow cooker and cook on low for 6-8 hours, or until the pork chops are tender and cooked through.
Serve:
Once done, remove the pork chops from the slow cooker and serve them with the rich onion sauce spooned over the top. Pair with mashed potatoes or rice for a complete meal.
