1/2 cup bread crumbs (use Panko for extra crunch)
1 pound of salmon, flaked (cooked or canned)
1/4 cup finely chopped onion
1 egg, beaten
1 tablespoon fresh parsley, chopped (optional)
1 teaspoon Dijon mustard (optional for flavor)
Salt and pepper to taste
1/4 cup vegetable oil (for frying)
Instructions
Prepare the mixture: In a large bowl, combine the flaked salmon, bread crumbs, chopped onion, beaten egg, parsley, and mustard (if using). Season with salt and pepper. Mix until all ingredients are well incorporated.
Form the patties: Shape the mixture into small, round patties (about 6-8 patties depending on your preferred size). Press them lightly to ensure they hold together.
Heat the oil: In a large skillet, heat the vegetable oil over medium heat. Ensure the oil is hot but not smoking.
Fry the patties: Carefully place the salmon patties into the skillet. Fry for about 3-4 minutes per side, or until they turn golden brown and crispy. Flip gently to avoid breaking them.
