Ingredients
1/2 cup (1 stick) unsalted butter, melted
3 ripe bananas, mashed
3/4 cup brown sugar (packed)
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup sour cream or full-fat Greek yogurt
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
In a large bowl, combine the melted butter and brown sugar. Whisk until the mixture becomes smooth and creamy.
Add the eggs one by one, whisking well between each addition. Stir in the mashed bananas, vanilla extract, and sour cream (or yogurt) until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gently fold the dry ingredients into the wet mixture. Be careful not to overmix; stir just until combined. If you’re using walnuts or chocolate chips, gently fold them in as well.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean or with a few moist crumbs. The top should be golden brown, and the bread should have risen beautifully.
Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serve warm or at room temperature. This rich banana bread is perfect on its own, but you can also add a slather of butter or cream cheese for extra indulgence!
