Savory Potato Leek and Ham Bake with Kefir Batter

Ingredients

1 cup kefir
1 ½ cups all-purpose flour
3 large eggs
1 ½ tsp baking powder
3 medium potatoes, peeled and shredded
1 large leek, thinly sliced
1 ½ cups cooked ham, diced
1 cup grated mozzarella cheese
Salt and pepper, to taste
Fresh dill, chopped (for garnish)
Butter or oil, for greasing the baking dish

Instructions

Preheat the oven
Preheat your oven to 180°C (350°F). Grease a rectangular baking dish or line it with parchment paper.

Prepare the batter
In a large mixing bowl, whisk together the eggs and kefir until well combined. Sift the flour and baking powder into the egg mixture and stir until you have a smooth, lump-free batter.

Prepare the vegetables and ham
In a separate bowl, combine the shredded potatoes, sliced leeks, and diced ham. Season with salt and pepper to taste, and mix thoroughly.

Combine the ingredients
Fold the potato, leek, and ham mixture into the batter, ensuring that all the ingredients are evenly distributed.

Assemble the bake
Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the grated mozzarella cheese over the top.

Bake
Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and crispy.

Garnish and serve
Remove from the oven and allow the bake to cool slightly. Garnish with freshly chopped dill before serving.
