Meatloaf Bites with Cheddar Cheese

Ingredients

1 egg
1/4 cup milk
1 lb (450g) ground beef
2 cloves garlic, minced
1/2 small onion, finely chopped
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
3-4 oz (85-115g) cheddar cheese, cut into small cubes
For the Glaze:

1 tbsp mustard
1/4 cup ketchup

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set it aside.

Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, egg, milk, minced garlic, chopped onion, Worcestershire sauce, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

Shape the Bites: Take a small amount of the meat mixture and flatten it in your palm. Place a cube of cheddar cheese in the center. Take a little more meat mixture and mold it around the cheese, ensuring it’s fully covered. Place the shaped meatloaf bite on the prepared baking sheet. Repeat this process with the remaining meat mixture and cheese.

Prepare the Glaze: In a small bowl, mix together the ketchup and mustard. Brush this glaze evenly over each meatloaf bite.

Bake: Bake in the preheated oven for 25 to 30 minutes, or until the meatloaf bites are cooked through and the tops are caramelized.
