Ingredients
1 medium onion, diced
1/3 lb. prime rib (or substitute with ground beef for a more accessible option)
4 large potatoes, peeled and diced
3 cloves garlic, minced
4 cups beef stock
1 cup water
Instructions
Brown the Beef: In a skillet over medium heat, brown the prime rib (or ground beef) until fully cooked. Drain excess fat and transfer the meat to your crockpot.
Prep the Veggies: Add the diced onion, potatoes, and minced garlic to the crockpot with the beef.
Add the Liquids: Pour in the beef stock and water, ensuring that the ingredients are well-covered.
Cook Low and Slow: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The soup is ready when the potatoes are soft and the flavors have melded together.
Finish and Serve: Stir the soup before serving to ensure the broth is evenly distributed.
Enjoy.
