Ingredients
1/4 cup coconut oil, melted
1/3 cup honey or maple syrup (or any natural sweetener)
1 tsp vanilla extract
1 cup almond butter (or any nut butter of your choice)
1 large egg (or flax egg for a vegan option)
1/2 tsp baking soda
1/4 tsp sea salt
1/4 cup chopped nuts (such as walnuts, almonds, or pecans)
2 tbsp chia seeds or flaxseeds
Optional: 1/4 cup sugar-free dark chocolate chips
Instructions
Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the Wet Ingredients: In a large bowl, combine the almond butter, melted coconut oil, honey or maple syrup, vanilla extract, and the egg. Stir until smooth and well-mixed.
Add the Dry Ingredients: To the wet mixture, add baking soda, sea salt, chopped nuts, chia seeds or flaxseeds, and chocolate chips (if using). Mix until all ingredients are well incorporated.
Shape the Cookies: Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, flattening each slightly with the back of a spoon.
Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown. Be careful not to overbake.
