Ingredients
1 cup of baby spinach or kale leaves
2 medium-sized beetroots, peeled and grated or thinly sliced
1 medium carrot, grated
1 apple, thinly sliced
1/4 cup walnuts, roughly chopped
1/4 cup feta cheese, crumbled (optional)
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon honey or maple syrup
Salt and pepper to taste
Instructions
Prepare the Beetroot: Peel the beetroots and either grate them or slice them thinly, depending on your preference. Set aside.
Assemble the Salad: On a large plate, arrange a bed of baby spinach or kale leaves. Scatter the grated beetroot, carrot, and apple slices over the greens.
Add Crunch and Flavor: Sprinkle the chopped walnuts over the salad. If you’re using feta cheese, crumble it over the top for added creaminess and flavor.
Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, salt, and pepper until well combined.
Dress and Serve: Drizzle the dressing evenly over the salad. Toss gently to combine all the ingredients, ensuring they’re well coated with the dressing.
