Cheesy Mashed Potato Puffs

Ingredients

1 cup all-purpose flour
3 cups mashed potatoes
1/4 cup grated Parmesan cheese (plus extra for topping, if desired)
2 tablespoons chopped chives
1/4 cup sour cream
Sea salt, to taste
2 beaten eggs
Optional: 2.5 tablespoons chopped parsley for added flavor and color

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare Mixture: In a large bowl, combine the mashed potatoes, flour, Parmesan cheese, chives, sour cream, and sea salt. Mix well. Add the beaten eggs and stir until the mixture is thoroughly combined.

Shape Puffs: Using a spoon or cookie scoop, form small puffs of the potato mixture and place them on the prepared baking sheet, spacing them about 1 inch apart. If desired, sprinkle extra Parmesan cheese on top of each puff.

Bake: Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and crispy on the outside.

Serve: Remove from the oven and let cool slightly before serving. Optionally, garnish with chopped parsley for added color and flavor.
