Ingredients
1 red bell pepper, diced
1 cup black beans (canned or cooked)
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup corn (canned or frozen)
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon chili powder
Salt and pepper to taste
4 large tortillas
1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
Salsa or guacamole (optional, for serving)
Instructions
Heat a little oil in a large skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
Add the ground beef to the skillet and cook until browned. Drain any excess fat if necessary.
Stir in the diced red bell pepper, black beans, corn, cumin, paprika, chili powder, salt, and pepper. Mix well and let it simmer for about 5 minutes.
Warm the tortillas in a skillet or microwave until pliable.
Spoon the beef mixture onto the center of each tortilla, then sprinkle with shredded cheese.
Fold in the sides of the tortilla and roll it up to form a burrito.
Heat a skillet over medium heat and cook the burritos until they are golden and the cheese has melted.
