Ingredients
1 ripe banana, mashed
1 egg
1/2 cup cornmeal
2 tablespoons tapioca flour
1 teaspoon baking powder
1/2 cup milk
Margarine for greasing the pan
Instructions
In a bowl, crack the egg and whisk it until frothy.
Add the mashed banana, cornmeal, tapioca flour, and baking powder to the bowl. Mix thoroughly.
Gradually incorporate the milk into the mixture, stirring until the batter is smooth and consistent.
Grease a pan with a hole in the center with margarine. Pour the batter into the pan.
Cover the pan with aluminum foil or a lid and place it on the stove over medium heat.
Cook for 30 minutes. After this time, carefully remove the cake from the pan and transfer it to a different pan.
Heat the cake in the new pan for an additional 10 minutes to finish cooking.
