Ingredients
2 cups milk
1 package (3.4 oz) vanilla instant pudding mix
1 cup mascarpone cheese
1/2 cup heavy cream
1/4 cup powdered sugar
1/2 cup brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
Ladyfingers or sponge cake, broken into pieces
Cocoa powder or grated chocolate, for garnish
Instructions
Prepare the Vanilla Pudding:
In a medium bowl, combine the vanilla pudding mix with the milk. Whisk until the mixture is smooth and begins to thicken. Set aside.
Make the Mascarpone Cream:
Beat the mascarpone cheese in a separate bowl until smooth.
In another bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
Gently fold the whipped cream into the mascarpone cheese until fully combined.
Assemble the Cups:
Briefly dip the ladyfingers or sponge cake pieces in the cooled coffee (and coffee liqueur, if using) to moisten them.
Place a layer of the soaked cake pieces at the bottom of each serving cup.
Spoon a layer of vanilla pudding over the cake pieces.
Add a layer of the mascarpone cream on top of the pudding.
Chill and Garnish:
Refrigerate the cups for at least 2 hours to let the flavors meld and the layers set.
Before serving, garnish with a dusting of cocoa powder or grated chocolate.
