Ingredients
2 tablespoons butter, melted
4 medium potatoes
2 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon onion powder
1 teaspoon paprika
1 cup shredded cheese (cheddar, mozzarella, or your choice)
Optional garnish: chopped fresh herbs, sour cream
Instructions
Preheat and Prepare:
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly. Leave the skins on for added texture.
Slice and Coat Potatoes:
Slice the potatoes into half-inch thick rounds.
In a large mixing bowl, toss the potato rounds with melted butter until evenly coated.
Season Potatoes:
Arrange the potato rounds in a single layer on a baking sheet.
Drizzle olive oil over the potatoes and season with salt, pepper, onion powder, and paprika.
Bake Potatoes:
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until potatoes are tender and crispy around the edges.
Add Cheese:
Remove the baking sheet from the oven.
Sprinkle shredded cheese evenly over the baked potato rounds.
Melt Cheese:
Return the baking sheet to the oven for another 3-5 minutes, or until the cheese is melted and bubbly, and the edges of the potatoes are golden brown.
Serve:
Remove from the oven and let cool for a few minutes.
Garnish with chopped fresh herbs and serve hot with a side of sour cream if desired.
