Slow Cooker Asian Beef Noodle Casserole

Ingredients

1 cup shredded carrots
1 cup chopped celery
1 lb ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup sliced mushrooms
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp ground ginger
1/4 tsp black pepper
2 cups beef broth
8 oz chow mein noodles, cooked according to package instructions

Instructions

Brown ground beef in a skillet over medium-high heat until cooked through. Drain excess fat.
Add onion and garlic to the skillet, cooking until softened (about 3-4 minutes).
Transfer beef mixture to a slow cooker. Add shredded carrots, chopped celery, sliced mushrooms, soy sauce, oyster sauce, hoisin sauce, sesame oil, ground ginger, black pepper, and beef broth. Stir to combine.
Cover and cook on low for 4-5 hours until vegetables are tender and flavors are blended.
During the last 30 minutes of cooking, stir in cooked chow mein noodles.
Serve hot, garnished with chopped green onions if desired.
