Perfect Soft and Fluffy Scones Recipe

Ingredients

1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 cups all-purpose flour
1/2 cup unsalted butter, cold and cut into small pieces
1/2 cup milk (preferably whole milk)
1/4 cup heavy cream
1 large egg
1 teaspoon vanilla extract
Optional: 1/2 cup add-ins such as dried fruit, chocolate chips, or nuts

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.

Cut in butter: Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Combine wet ingredients: In a separate bowl, whisk together milk, heavy cream, egg, and vanilla extract.

Combine wet and dry ingredients: Pour the wet ingredients into the flour-butter mixture. Stir gently with a spatula or wooden spoon until the dough just starts to come together. If using add-ins, gently fold them into the dough.

Shape the scones: Transfer the dough onto a lightly floured surface. Pat it into a circle about 1 inch (2.5 cm) thick. Using a sharp knife or a bench scraper, cut the circle into 8 wedges.

Bake: Place the scones on the prepared baking sheet, leaving some space between each. Brush the tops with a little milk or cream for a golden finish.
