Ingredients
3 tablespoons butter, melted
2 cloves garlic, minced
4 medium-sized potatoes
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Chopped fresh parsley for garnish
Instructions
Preparation: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Potatoes: Scrub the potatoes clean under running water. Pat them dry with a towel. Place a potato on a cutting board and make vertical slices across the potato, about 1/8 inch apart, making sure not to cut all the way through. Repeat with the remaining potatoes.
Seasoning Mixture: In a small bowl, mix together the melted butter, minced garlic, and thyme leaves. Season with salt and pepper according to your taste.
Coat Potatoes: Place the sliced potatoes on the prepared baking sheet. Brush the seasoned butter mixture generously over each potato, making sure to get in between the slices. Reserve some of the mixture for a second coat later.
Bake: Bake the potatoes in the preheated oven for about 45-50 minutes, or until the edges are crispy and the inside is tender. Halfway through baking, remove the potatoes from the oven and brush with the remaining butter mixture. Optionally, sprinkle Parmesan cheese over the potatoes during the last 10 minutes of baking.
Serve: Remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.
