Instructions
Prepare the Batter:
In a large mixing bowl, combine the flour, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
In another bowl, whisk together the eggs and milk until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
Add Cheese and Vegetables:
Fold in the grated cheese, chopped vegetables, and parsley until evenly distributed throughout the batter.
Heat the Oil:
In a deep frying pan or a deep fryer, heat vegetable oil to 350°F (175°C). There should be enough oil to submerge the beignets.
Fry the Beignets:
Using a tablespoon or a small ice cream scoop, carefully drop spoonfuls of batter into the hot oil. Avoid overcrowding the pan.
Fry the beignets until they are golden brown and crispy, about 3-4 minutes per side.
Use a slotted spoon to remove the beignets from the oil and transfer them to a paper towel-lined plate to drain excess oil.
Serve:
Serve the vegetable cheese beignets warm. They can be enjoyed on their own or with a dipping sauce of your choice, such as marinara, ranch, or aioli.
