Grilled Chicken Bites with Creamy Garlic Sauce

Servings: 4 | Prep Time: 15 mins | Cook Time: 15 mins

Ingredients

For the Chicken Bites:

2 large boneless, skinless chicken breasts (or thighs), cut into bite-sized cubes

2 tbsp olive oil

1 tbsp lemon juice

3 cloves garlic, minced

1 tsp smoked paprika (or regular)

1 tsp dried oregano

1/2 tsp black pepper

1/2 tsp salt

For the Creamy Garlic Sauce:

3 tbsp butter

4 cloves garlic, minced or finely grated

1 cup heavy cream (or half-and-half for lighter version)

1/4 cup grated Parmesan cheese

Salt & pepper to taste

1 tbsp chopped parsley (optional, for garnish)

Instructions

Grill the Chicken Bites:

Marinate:

In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Add chicken and toss to coat. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge for deeper flavor).

Grill or Pan-Sear:

Heat a grill pan or skillet over medium-high heat. Add the chicken pieces and cook for 3–4 minutes per side or until golden and cooked through. Remove and keep warm.

Make the Creamy Garlic Sauce:

Sauté Garlic:

In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

Add Cream & Cheese:

Stir in the heavy cream and bring to a gentle simmer. Add Parmesan and stir until melted and smooth.

Season:

Add salt and pepper to taste. Simmer until slightly thickened (2–3 minutes). If too thick, thin with a splash of milk.

To Serve:

Drizzle the creamy garlic sauce over the grilled chicken bites, or serve it on the side as a dipping sauce.

Garnish with chopped parsley or extra Parmesan if desired.

Great with rice, roasted veggies, or over salad greens.

Variations:

Spicy Version: Add chili flakes to the marinade or sauce.

Low-carb/keto: Serve with cauliflower rice or steamed greens.

Dairy-free: Use coconut cream and nutritional yeast instead of cream and cheese.

Enjoy.
