Festive Cranberry Orange Loaf

Ingredients

1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
3/4 cup fresh cranberries, chopped
Zest of 1 orange
1/2 cup freshly squeezed orange juice
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Gently fold in the chopped cranberries and orange zest until evenly distributed.
In a separate bowl, mix together the orange juice, vegetable oil, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
