Ingredients
For the Meatloaf:
1 medium onion, finely chopped
1 ½ lbs (680 g) ground beef
1 cup breadcrumbs
1 egg
½ cup milk
2 tbsp Worcestershire sauce
2 tbsp ketchup
1 tsp garlic powder
1 tsp dried thyme
Salt and pepper to taste
For the Mashed Potatoes:
4 tbsp butter
4 large potatoes, peeled and chopped
½ cup milk
Salt and pepper to taste
For the Topping:
1 cup shredded cheddar cheese
Fresh thyme for garnish (optional
Instructions
Prepare the Mashed Potatoes:
Boil the chopped potatoes in salted water until soft, about 15 minutes. Drain well.
Mash the potatoes with butter and milk until smooth. Season with salt and pepper to taste. Set aside.
Make the Meatloaf:
Preheat the oven to 350°F (175°C). Line a baking dish with foil for easy cleanup.
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, egg, milk, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and pepper. Mix everything until well combined.
Shape the mixture into small loaves (about 4-6 mini loaves) and place them on top of the mashed potatoes in the baking dish.
Bake and Add Cheese:
Bake the meatloaf for 35-40 minutes, or until cooked through.
Once done, remove from the oven and top each loaf with shredded cheddar cheese. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Sprinkle fresh thyme over the cheese (optional) and let the dish rest for a few minutes before serving.
