Pickled Beets

Ingredients:8 medium fresh beets1 cup vinegar1/4 cup sugar substitute (like Swerve or monk fruit)1 1/2 tsp whole cloves1 1/2 tsp whole allspice1/2 tsp saltInstructions:Scrub beets, trim tops to 1 inch, and boil in water until tender (25-30 mins).
