Ingredients:
1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon granulated sugar
1 ¼ cups milk (dairy or non-dairy)
1 large egg
3 tablespoons melted butter (or neutral oil)
1 teaspoon vanilla extract (optional, for flavor)
Instructions:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In another bowl, mix the milk, egg, melted butter, and vanilla until smooth.
Pour the wet ingredients into the dry and stir gently until just combined (don’t overmix; the batter should be slightly lumpy).
Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil.
Pour about ¼ cup of batter for each pancake.
Cook until bubbles form on the surface (about 2 minutes), then flip and cook another 1–2 minutes until golden brown.
