Ingredients
4-6 pork chops (bone-in or boneless, as preferred)
1 large onion, sliced
1 can (15 oz) tomato sauce
1 cup beef stock or broth
2 tbsp Worcestershire sauce
2 tbsp brown vinegar (or apple cider vinegar for a milder taste)
Salt and pepper, to taste
Optional: 1 tbsp brown sugar (for a touch of sweetness)
Instructions
Prepare the Pork Chops
Season the pork chops with salt and pepper on both sides. For added flavor, let them sit for a few minutes to absorb the seasoning.
Layer in the Slow Cooker
Place the sliced onions on the bottom of the slow cooker, creating a base layer for the pork chops.
Place the pork chops on top of the onions in an even layer.
Make the Sauce
In a bowl, mix the tomato sauce, beef stock, Worcestershire sauce, brown vinegar, and brown sugar (if using). Stir until well combined.
Cook the Dish
Pour the sauce mixture evenly over the pork chops and onions in the slow cooker.
Cover with the lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork chops are tender and infused with the sauce.
Serve and Enjoy
Once done, serve the casserole chops with a spoonful of sauce and some onions from the slow cooker. Pair with mashed potatoes, rice, or crusty bread to soak up the rich sauce.
Tips:
Add Veggies: You can add carrots, bell peppers, or potatoes to make it a complete one-pot meal.
Thicker Sauce: If you prefer a thicker sauce, remove the lid during the last hour of cooking, or add a slurry of cornstarch and water for extra thickness.
