1/4 cup apple cider vinegar
2 tablespoons olive oil
4-5 medium beets, peeled and cooked
1 tablespoon honey or maple syrup
1/2 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, minced (optional)
Fresh herbs like parsley or dill for garnish (optional)
Instructions
Prepare the Beets: If your beets are not yet cooked, start by boiling or roasting them until tender. Boil in salted water for 30-40 minutes, or roast at 400°F (200°C) for about an hour, until they’re easily pierced with a fork. Let them cool slightly, then peel and slice them into rounds or wedges.
Make the Marinade: In a bowl, whisk together the apple cider vinegar, olive oil, honey, salt, black pepper, and minced garlic if using. Adjust the seasoning to taste.
Marinate the Beets: Place the beet slices in a large bowl or shallow container. Pour the marinade over the beets, making sure they’re evenly coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
Serve: Before serving, sprinkle with fresh herbs like parsley or dill for added flavor and color. Enjoy as a side dish, add to salads, or pair with goat cheese for a delightful contrast.
