2 cups diced apples (Granny Smith or Honeycrisp recommended)
2 tablespoons melted butter
For the Glaze:
2 tablespoons milk
1 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
Combine Wet Ingredients: In a separate bowl, beat the eggs, then mix in milk, vanilla extract, and melted butter until smooth.
Combine Mixtures: Slowly add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
Fold in Apples: Gently fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
Spoon onto Baking Sheet: Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake for 12-15 minutes or until golden brown and cooked through. The fritters should be lightly browned and springy to the touch.
Prepare the Glaze: While the fritters bake, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
