Savory Mini Meatloaf Muffins

Ingredients

1/2 cup breadcrumbs
1 lb (450g) ground beef (or ground turkey)
1/4 cup diced onion
1/4 cup diced green bell pepper
1 large egg, beaten
2 cloves garlic, minced
2 tbsp ketchup (plus more for topping)
1 tbsp Worcestershire sauce
1 tsp dried Italian seasoning
1/2 tsp salt
1/4 tsp black pepper

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone muffin liners.

Prepare the Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, onion, bell pepper, garlic, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix everything together until just combined. Be careful not to overwork the meat.

Fill the Muffin Tin: Divide the meat mixture evenly between the 12 muffin cups, pressing it gently to pack it down.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meat is fully cooked and reaches an internal temperature of 160°F (71°C).

Optional Topping: For extra flavor, remove the muffins after 15 minutes of baking, spread a bit of ketchup on top of each one, then return to the oven to finish baking.

Serve and Enjoy: Let the mini meatloaves cool for a few minutes before removing them from the tin. Serve warm with your favorite side dishes.

Tips:

You can swap the ground beef for ground turkey or chicken for a lighter version.
Add shredded cheese to the meat mixture for an extra gooey and cheesy surprise.
For a spicy kick, include diced jalapeños or a dash of hot sauce in the meat mixture.
