1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup sour cream or Greek yogurt
1 can (8 oz) crushed pineapple, well-drained
1/4 cup reserved pineapple juice
1/2 cup shredded coconut (optional)
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3 minutes. Beat in the eggs one at a time, then add the vanilla extract and mix well.
Incorporate Wet Ingredients: Stir in the sour cream (or Greek yogurt) until fully combined. Gently fold in the crushed pineapple and the reserved pineapple juice.
Combine and Mix: Gradually add the dry ingredients to the wet mixture, stirring just until incorporated. If using, fold in the shredded coconut and chopped nuts to add a tropical crunch.
Bake: Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
