Velvety Chinese-Style Beef Stir-Fry

Ingredients

1 tbsp vegetable oil (plus extra for stir-frying)
1 lb (450g) beef (flank steak or sirloin, thinly sliced against the grain)
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
1 tsp baking soda (for tenderizing)
2 cloves garlic (minced)
1-inch piece of fresh ginger (minced)
1 bell pepper (thinly sliced)
1 onion (thinly sliced)
2 green onions (cut into 1-inch segments)
1 tbsp hoisin sauce (optional, for a hint of sweetness)
1 tsp sesame oil (optional, for added flavor)

Instructions

Prepare the Marinade:

In a medium-sized bowl, combine the soy sauce, oyster sauce, cornstarch, baking soda, and 1 tablespoon of vegetable oil.
Add the sliced beef to the marinade, making sure each piece is well coated. Allow the beef to marinate for at least 15 minutes to absorb the flavors and become tender.
Prep the Vegetables:

While the beef is marinating, slice the bell pepper, onion, and green onions.
Cook the Beef:

Heat a wok or large skillet over high heat. Add a small amount of vegetable oil.
Once the oil is shimmering, add the marinated beef in a single layer. Stir-fry the beef for 2-3 minutes until it’s browned and cooked through. Remove the beef from the pan and set it aside.
Stir-Fry the Vegetables:

In the same pan, add a bit more oil if necessary. Toss in the minced garlic and ginger, stir-frying until aromatic, about 30 seconds.
Add the sliced onions and bell pepper to the pan. Stir-fry for 2-3 minutes, or until the vegetables are tender but still crisp.
Combine and Finish:

Return the cooked beef to the pan along with the green onions. Add the hoisin sauce if using, and stir everything together until well combined.
