Crispy Restaurant-Style Batter

Ingredients

1 cup cornstarch
1 teaspoon baking powder
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup cold sparkling water or cold beer

Instructions

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, paprika, garlic powder, and onion powder.
Incorporate Liquid: Gradually mix in the cold sparkling water or beer until the batter is smooth and well combined. The cold liquid helps create a light and crispy texture.
Let Batter Rest: Allow the batter to sit for 10-15 minutes to enhance its texture and crispiness during frying.
Prepare for Frying: Heat oil in a deep fryer or large pan to 350°F (175°C). Dip your seafood or vegetables into the batter, making sure they are well coated.
Fry Until Golden: Carefully place the battered items into the hot oil and fry until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
