Chocolate Peanut Butter Oat Bars

Ingredients

1/2 cup honey or maple syrup
1 cup creamy peanut butter
1/4 cup coconut oil or butter
2 cups rolled oats
1 cup chocolate chips (semi-sweet or dark)

Instructions

Prepare the Baking Pan:

Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal, or lightly grease with oil.
Melt Peanut Butter Mixture:

In a medium saucepan over low heat, combine peanut butter, honey or maple syrup, and coconut oil or butter. Stir until melted and smooth.
Mix in Oats:

Remove the saucepan from heat. Add rolled oats to the peanut butter mixture. Stir until oats are evenly coated.
Press into Pan:

Transfer the mixture to the prepared baking pan. Use a spatula or your hands to press it evenly into the pan.
Melt Chocolate:

In a microwave-safe bowl or using a double boiler, melt chocolate chips until smooth, stirring occasionally.
Spread Chocolate:

Pour melted chocolate over the oat mixture in the pan. Use a spatula to spread it evenly to cover the oats.
Chill:

Refrigerate bars for at least 2 hours, or until chocolate is firm and set.
Cut and Serve:

Lift the bars out of the pan using the parchment paper overhang. Cut into squares or bars.
