Shrimp-Stuffed Baked Potatoes

Ingredients

1 lb shrimp, peeled and deveined
1 tablespoon olive oil
Salt and pepper, to taste
1/2 cup sour cream
4 large baking potatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
1/4 cup chopped fresh parsley
Optional toppings: butter, bacon bits, hot sauce

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Potatoes: Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork or knife. This allows steam to escape during baking.

Bake Potatoes: Place the potatoes directly on the oven rack and bake for about 50-60 minutes, or until they are tender when pierced with a fork.

Prepare Shrimp: While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then cook them for 2-3 minutes per side, or until they are pink and opaque. Remove from heat and set aside.

Prepare Toppings: In a small bowl, mix sour cream, cheddar cheese, green onions, and parsley. Season with salt and pepper to taste.

Assemble: Once the potatoes are done, make a lengthwise slit across the top of each potato and gently push ends towards the center to open. Fluff the insides with a fork.

Stuff Potatoes: Divide the sour cream mixture evenly among the potatoes, spreading it inside each one. Top with cooked shrimp and any optional toppings you desire.
