Crispy Bacon-Sautéed Cabbage

Ingredients

4-6 slices of bacon, diced
1 onion, thinly sliced (optional)
1 small head of cabbage, thinly sliced
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste
Red pepper flakes (optional, for a hint of spice)
1-2 tablespoons olive oil or bacon grease (if needed)

Instructions

Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until it becomes crispy. If the bacon is lean, you may need to add a tablespoon of olive oil or bacon grease to the skillet.

Sauté Onion and Garlic (if using): If you choose to add onion, sauté it in the rendered bacon fat until it turns translucent and lightly caramelized, about 3-4 minutes. Add minced garlic and sauté for another 30 seconds until fragrant.

Add Cabbage: Stir in the thinly sliced cabbage, mixing it with the bacon and onion mixture. Cook until the cabbage begins to wilt, approximately 5-7 minutes, stirring occasionally for even cooking.

Seasoning: Season the cabbage mixture with salt, pepper, and red pepper flakes (if using), adjusting the seasoning to suit your taste. Continue cooking until the cabbage is tender yet still retains a slight crispness, about 5-7 minutes more.

Serve: Remove the skillet from heat and serve the crispy bacon-sautéed cabbage warm. This dish complements well with grilled meats, roasted chicken, or as a hearty breakfast side dish.
