Crispy Herb-Infused Potato Patties

Ingredients

1/4 cup finely chopped green onions or chives
2 cups mashed potatoes (about 3 medium potatoes)
1 cup shredded cheese (cheddar, mozzarella, or your choice)
1/4 cup fresh parsley, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup all-purpose flour (for dusting)
1 large egg
1 cup breadcrumbs (optional for extra crunch)
Oil for frying

Instructions

Prepare the Potatoes:

Boil the potatoes in salted water until tender. Drain and mash them until smooth. Let them cool slightly.
Mix Ingredients:

In a large bowl, combine the mashed potatoes, shredded cheese, green onions, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Shape the Patties:

Take a small portion of the mixture and form it into a patty shape (about 2-3 inches wide). Repeat until all the mixture is used.
Coat the Patties:

Set up a breading station with one plate for the flour, one for the beaten egg, and one for the breadcrumbs (if using). Dredge each patty in flour, dip it in the egg, and then coat with breadcrumbs for extra crunch.
Fry the Patties:

Heat oil in a skillet over medium heat. Fry the patties in batches for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed to maintain a good frying level.
Drain and Serve:

Once fried, transfer the patties to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce or as a side dish.
