Ingredients
2 eggs
Apples: Enough to line the bottom of an 8-inch pie dish (about 3-4 medium-sized apples)
1 cup sugar (set aside ¼ cup and mix it with 1 teaspoon cinnamon)
2 tablespoons melted butter (or margarine)
1 cup white flour
1 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
Prepare the Apples:
Preheat your oven to 350°F (175°C).
Peel and thinly slice apples, enough to cover the bottom of your 8-inch pie dish in a single layer.
Cinnamon Sugar:
Combine ¼ cup of sugar with 1 teaspoon of cinnamon.
Sprinkle this mixture evenly over the apple slices.
Make the Topping:
In a separate bowl, mix the remaining ¾ cup of sugar, eggs, melted butter, flour, baking soda, and vanilla extract until smooth.
Assemble the Dish:
Pour the batter over the apples, spreading it evenly to cover the entire surface.
Bake:
Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and crisp.
Enjoy.
